  1. Rinse quinoa under cold water in a fine mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and water has been absorbed. Fluff with a fork and set aside.
  2. In a large bowl, combine shrimp, 1 tablespoon olive oil, Cajun seasoning, paprika, and cayenne pepper (if using). Toss to coat the shrimp evenly.
  3. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until they are pink and cooked through.
  4. In a large bowl, combine cooked quinoa, cherry tomatoes, bell pepper, and red onion. Drizzle with lemon juice, and season with salt and pepper. Toss to combine.
  5. Divide the quinoa and vegetable mixture among four bowls. Top each bowl with cooked Cajun shrimp and garnish with fresh cilantro. Serve immediately.
