  1. In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and the water is absorbed. Fluff with a fork and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add diced chicken, season with salt and pepper, and cook until no longer pink, about 4-5 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, heat another tablespoon of vegetable oil. Add onion and cook for 3-4 minutes, or until softened. Stir in garlic and cook for an additional minute.
  4. Add thawed peas and carrots to the skillet and cook for 2-3 minutes, until vegetables are tender. Push the vegetables to one side of the skillet.
  5. In the empty side of the skillet, add the remaining tablespoon of vegetable oil and pour in the beaten eggs. Cook the eggs, stirring constantly, until scrambled and cooked through.
  6. Add the cooked rice and chicken back to the skillet, stirring to combine with the vegetables and eggs. Drizzle the soy sauce over the mixture and cook for an additional 2-3 minutes, stirring frequently to ensure even seasoning.
  7. Remove from heat and stir in green onions. Taste and adjust seasoning as needed.
  8. Serve the Chicken Fried Rice hot, garnished with sesame seeds if desired.
