  2. In the same pot, add the sliced onion, green bell pepper, and red bell pepper. Cook for 5-7 minutes, or until the vegetables are softened.
  3. Add the minced garlic to the pot and cook for an additional minute.
  4. Return the seared flank steak to the pot. Add the beef broth, tomato sauce, tomato paste, ground cumin, paprika, dried oregano, ground black pepper, and bay leaf. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the flank steak is tender and can be easily shredded with a fork.
  6. Remove the flank steak from the pot and shred it using two forks. Discard the bay leaf.
  7. Return the shredded beef to the pot and mix it with the sauce. Cook for an additional 15-20 minutes, allowing the flavors to meld together. Season with salt, to taste.
  8. Serve the Cuban Ropa Vieja hot, garnished with chopped fresh cilantro. Enjoy with rice and black beans, if desired.
