Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and cook for 4-5 minutes, until the onion is softened.
  2. Add the chicken pieces to the pot and cook, stirring occasionally, for 5-6 minutes, until the chicken is browned.
  3. Stir in the cayenne pepper, paprika, cumin, coriander, turmeric, salt, and black pepper, coating the chicken and onions evenly.
  4. In a separate bowl, whisk together the peanut butter and about 1/2 cup (120 ml) of the chicken broth until smooth. Pour the peanut butter mixture, diced tomatoes, and the remaining chicken broth into the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  5. Add the diced sweet potatoes to the pot and continue to simmer for another 15-20 minutes, until the sweet potatoes are tender.
  6. Stir in the kale or collard greens and cook for an additional 5 minutes, until the greens have wilted.
  7. Taste and adjust the seasonings if needed. Serve the stew over rice or with warm crusty bread, and garnish with chopped cilantro if desired. Enjoy your fragrant and hearty West African Peanut Stew!
