Directions

  1. In a medium saucepan, combine the uncooked brown rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is cooked and the water is absorbed.
  2. Meanwhile, in a small bowl, whisk together the ingredients for the gochujang sauce and set aside.
  3. Heat the sesame oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute, or until fragrant.
  4. Add the zucchini and carrot to the skillet, and cook for 3-4 minutes, or until tender. Stir in the spinach and bean sprouts, and cook for an additional 1-2 minutes, or until the spinach is wilted. Transfer the cooked vegetables to a plate and set aside.
  5. In the same skillet, fry the eggs to your desired level of doneness.
  6. To assemble the bibimbap bowls, divide the cooked brown rice among four bowls. Arrange the sautéed vegetables on top of the rice and place a fried egg on each bowl.
  7. Drizzle the gochujang sauce over each bowl and serve immediately. Enjoy your Healthy Korean Bibimbap Bowl!
