  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook for 3-4 minutes on each side, until golden brown. Remove the tofu from the skillet and set aside.
  2. In the same skillet, add the garlic and ginger, and cook for 1-2 minutes, or until fragrant. Add the red bell pepper, green bell pepper, zucchini, and mushrooms. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
  3. In a small bowl, whisk together the soy sauce, black bean sauce, hoisin sauce, crushed Sichuan peppercorns, and red pepper flakes, if using.
  4. Add the tofu back to the skillet with the vegetables, and pour the sauce mixture over everything. Stir to combine.
  5. In a separate small bowl, whisk together the vegetable broth, cornstarch, and cold water. Pour this mixture into the skillet, stirring continuously to thicken the sauce.
  6. Cook for an additional 2-3 minutes, or until the sauce has thickened and the tofu and vegetables are heated through.
  7. Garnish with chopped green onions and unsalted peanuts, if desired. Serve the Mapo Tofu over steamed rice or with a side of your favorite grain.
