Directions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cauliflower florets with 1 tablespoon of vegetable oil. Spread the cauliflower onto the prepared baking sheet in a single layer. Roast for 20-25 minutes, or until the cauliflower is tender and slightly golden.
  3. While the cauliflower roasts, prepare the sauce. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, cornstarch, sugar, and crushed red pepper flakes. Set aside.
  4. In a large skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the garlic and ginger and cook for 1 minute, or until fragrant.
  5. Pour the sauce into the skillet and cook for 2-3 minutes, or until the sauce thickens. Stir in the roasted cauliflower and toss to coat evenly.
  6. Remove the skillet from the heat and stir in the peanuts, green onions, and sesame oil.
  7. Serve the Kung Pao Cauliflower over rice or noodles, and enjoy!
