  2. Add the chickpeas, zucchini, carrots, bell pepper, diced tomatoes, and vegetable broth to the pot. Season with salt and pepper, and stir to combine.
  3. Bring the mixture to a boil, then reduce the heat, cover, and let simmer for 45 minutes, or until the vegetables are tender.
  4. If using raisins or dried apricots, stir them into the tagine during the last 10 minutes of cooking.
  5. Garnish with fresh cilantro and parsley, and serve over couscous or rice. Enjoy!
