  2. In a shallow dish, soak the bread in milk until soft, then gently squeeze out the excess milk, reserving the milk for later.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and garlic, and cook until soft and translucent, about 5 minutes.
  4. Add the ground beef or lamb to the skillet and cook until browned. Break up the meat with a spoon as it cooks.
  5. Stir in the curry powder, turmeric, coriander, cumin, cinnamon, sugar, vinegar, raisins, and almonds. Season with salt and pepper to taste.
  6. Crumble the soaked bread into the meat mixture and stir well to combine.
  7. Transfer the meat mixture to a greased ovenproof dish and spread it out evenly.
  8. In a small bowl, whisk together the eggs and the reserved milk. Pour the egg mixture over the meat in the dish.
  9. Place a few bay leaves on top for garnish, and bake for 45 minutes, or until the topping is golden and set.
  10. Serve the Bobotie hot with yellow rice and chutney on the side.
