  2. Stir in the garlic, cumin, paprika, ground coriander, and red pepper flakes (if using). Cook for another 1-2 minutes, until the spices are fragrant.
  3. Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender.
  4. Once the lentils are cooked, use an immersion blender to partially blend the soup, leaving some texture. If you don't have an immersion blender, you can transfer about half of the soup to a regular blender, blend until smooth, and then return it to the pot.
