  2. Using a spoon, scoop out the flesh from the zucchini halves, leaving a 1/4-inch (0.6 cm) thick border. Chop the scooped-out zucchini flesh and set aside.
  3. Place the zucchini halves cut-side-up on the prepared baking sheet.
  4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and cook for 5 minutes, or until softened.
  5. Stir in the chopped zucchini flesh, garlic, corn, black beans, cherry tomatoes, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, until the mixture is heated through.
  6. Spoon the veggie mixture into the zucchini boats, pressing down gently to pack it in. Top each boat with shredded cheese.
  7. Bake the stuffed zucchini boats for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Serve with your choice of optional toppings, such as avocado, fresh cilantro, lime wedges, or salsa.
